We're in the middle of the glorious fig season, and I'm loving it! Fig Newtons were a childhood favorite, so why not recreate an old favorite in a fancy way. Gluten free all natural with a fig slice on top, you can't beat this fancy fig newton recipe.
Having homemade fig jam is great for this recipe, but if you don't have the time a store bought will do!
1/2 Cup lemon juice
¾ cup granulated sugar
2 tablespoons Agave
1½ tablespoon lemon juice
1 pound ripe fresh Black Mission Figs, stemmed and quartered
1. Add all ingredients in the saucepan to a boil over medium-high heat, stirring frequently. Reduce heat to medium-low and simmer 40-50 minutes or until mixture thickens, continuing to stir frequently so the mixture doesn’t stick to the bottom of the pot.
2. Add mixture into a high power blender
Fancy Fig Newtons
1 cup all purpose gluten free flour
1½ cups gluten free rolled oats
¼ cup coconut sugar
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons agave syrup
⅓ cup coconut oil melted
Preheat Oven to 375
In a mixing bowl, whisk together dry ingredients.
After dry ingredients are mixed well slowly add in melted cocout oil and agave syrup.
Set aside a 1/3 cup of the oat mixture.
Pour ingredience into a 8" square pan and press down untill secure.
Next, spread out fig jam evenly on top and add saved oat crumble
Bake for 25 minutes or until lightly browned.
Wait until completly cooled, add slices of freshly cut figs, cut into squares and serve.
